Monday: Professional aspects of crewing on Superyachts
Your course take place at the Superyacht hub of Sydney: the Superyacht Marina at Rozelle Bay. This introduction to your career working on a yacht includes all the basics you need to get started: the history, the different types of yachts and modes of operation, the industry today: designers, builders, crews, managers, the owners and their requirements, future trends… “who’s who, what’s what and what it's like working at this elite level of hospitality.“

Tuesday morning: Working on a Superyacht
An introduction for going to sea, you will learn:
- What makes a great crew member
- Hints for success in your role
- More Yachting (Nautical) terminology
- More on the use of Nautical Flags,
- The Forces of Wind,
- Ropes & knots & mooring lines
- Correct forms of address
Of special note is the unique opportunity for our students to “interview” Superyacht Captains – our guest Captains will give their perspective on the yachting industry, answer questions, and provide invaluable professional insight. The group will do “the dockwalk” at the Superyacht Marina to see the motor yachts up close and it is usually possible to tour aboard one.
The first two days training are held at The Sydney Superyacht Marina at Rozelle Bay where there is free parking all day. It's the ultimate location for a course! You have the opportunity to get an up-close look at actual Superyachts berthed at the marina!
We will also take a tour around a Superyacht* so that students can “get their bearings”.*
“Day work” opportunities for our students can usually be arranged and would be highly useful to have on your C.V.
Tuesday afternoon and Wednesday: Chef cross-training
A highly experienced Superyacht Chef will take the Chef students for the next 1½ days and concentrate on the Chef-specific elements of working on Superyachts. You will hear first-hand accounts of what you can expect, what can happen and learn how to organise yourself for any eventuality..! Some of the topics covered are:
- The importance of the Chef’s role onboard a Superyacht
- Wages, conditions, hierarchy, career progression for Chefs
- Organising yourself: the "sole chef" scenario and "Chef duo" scenario
- Budget for food – how it generally works and your responsibilities
- The Food & Beverage relationship between the “interior crew” and the guests, how the menu is worked out.
- Working with interior crew – developing a unified, productive relationship
- Chartering: Guest Preference Sheets
- Advanced Provisioning Allowance – how it works with Charter finances
- Provisioning: the importance of comprehensive checklists and preparation: How do I know if I have everything? (You’re nowhere near the supermarket quite often..!)
- Meal Presentation, Content and Variety plus some useful Menu samples
Thursday: Superyacht Service 1 (with a focus on Silver Service)
It is highly useful for Superyacht Chef's to understand the entire hospitality (F&B) operation in order to work as a successful and efficient Interior team. The Chefs rejoin the interior crew for the remainder of the week to learn Superyacht F&B operations in the following areas:
- Theory regarding the various forms of Service onboard a Superyacht: Plated (American style), Buffet (Formal and Informal), Gueridon, Family Service, Cocktail Party (Tray) Service, Forms of Silver Service (French & Russian), Formal Dinner, 24/7 service.
- Formal Table Setting and Table Decoration & Themed Nights, Service Table Set-up, (practical)
- Meal Service: Preparation, Sequence and Order of Service, Clearing* and Crumbing*, Wine service*, *includes practical
- Practical: Silver Service Techniques and Meal Service (hot lunch provided so that students can practice their silver service skills and gain as much “hands on” as possible)
- Breakfast and Lunch Service and Preparation.
- Food Handling and Hygiene
- Cultural Dietary Restrictions
- Practical and Written Assessment
Friday: Superyacht Service 2 (All forms of Service onboard)
- Caviar Service (French and Russian): theory and practical: includes tasting
- Cheese Service and knowledge/experience with Cheese: includes Practical: building a cheese board and tasting afterwards! This ties in well with…..
- Introduction to Wine: storage, knowledge, decanting and serving.
- Your wine experience and appreciation: includes practical tasting with wine expert guest speaker, Nigel Burton from Burton Premium Wines. You receive a custom Wine Appreciation certificate!
- Overview of Coffee Service on a yacht.
- Afternoon Tea Service: includes practical
- How to present Fruit baskets, Sweets and Nuts: includes practical
- Cigar Service: experience a Humidor, Guillotine and Cubans!
- An overview of Bar Service on a yacht.
- Provisioning of Wine, Alcohol and other drinks
- Practical and Written Assessment, Presentation of Certificates, Group Photo!
